Upside-down Pineapples

So this week was my birthday!!! I am officially 20 years old and boy do I ever feel those wrinkels setting in. But seriously, I had an absolutely fantastic birthday with my family, friends, and a beautiful pineapple upside-down cake. I’m not much of a fan of frosting or cupcakes so when my birthday rolls around I beg my mom for my favorite treat. I suppose since I am 20 I should learn how to make my own pineapple upside-down cake on my own.Pineapple Upside-down Cake

 The birthday celebration started this past weekend, I went out to my boyfriends cabin on Battle Lake and waited for the sun to start shining. It was a gloomy weekend but we packed it with some gift shopping, a trip to Zorbaz on Ottertail Lake, and a lot of sand castle building! There were two little kids who I hung out with all weekend, Izabel,7 and Landon, 4. Together we created “SandCastleLand” which came complete with an airport, a school, a bowling alley, and rocks and twigs for decorations. The kids even built a huge sand wall that protected the castles from the waves all weekend long.

 On Sunday, my mom, dad, sister, and older cousin came out to the cabin to join in the festivities, and with my mom came the famous pineapple upside-down cake! Thankfully, at about noon on Sunday the clouds cleared and the sun started beaming. With the change of weather we all threw on our suits and went swimming; my dad and boyfriend even got in a little fishing. The afternoon concluded with presents, my favorite cake, and the singing of that old time hymn, “Happy Birthday to You…” I really could not have asked for a better day.

 Now, in my old age, I’m looking forward to the beginning of fall semester. I can’t believe how fast this summer has passed by, but I have a feeling that it’s only going to get better. This weekend I’m going to Valley Fair! I hope I don’t get sick on any rides!

Alright, so I didn’t buy any peanuts or crackerjacks, but I did buy a big bag of kettle corn when I went to the RedHawks game this week. It was DELICIOUS!!Hawkeye!!

 The RedHawks are Fargo-Moorhead’s semi-pro baseball team. This Tuesday I went with some fellow Cobbers to a game versus the Gary South-Shore Railcats, and what a game it was! First of all this was the first RedHawks Game that I had actual seats to not just general admission tickets. My friends and I had seats right behind third base. The RedHawks were behind the whole game, and then in the bottom of the ninth inning the RedHawks scored two runs to win the game! What a comeback! Baseball is always fun, but it’s even more fun when you’re eating kettle corn and your team wins!

 My favorite part of the game though had to be when Hawkeye, the mascot of the RedHawks, came over by our seats during the 7th inning stretch and danced to “The YMCA.” Golly, he’s so dreamy! What a talented mascot. I wonder who would win in a dance-off, Hawkeye or Kernel? My money is on Kernel!! I mean really what’s better than a dancing ear of corn? Hehe.

 Otherwise my birthday is next week! I’ll be spending it in the office with all my favorite Student Ambassadors! I’ll finally be 20, and I’ll get my brains back! What more could a girl ask for on her birthday?

First of all… the ducks in Prexy’s Pond are now teenagers! They often spend their afternoons swimming around our new fountain, stepping up on the lighting fixture and then jumping back into the cool water, rough life, huh?Halloween Trick-or-Treating on Park Region 1st Floor

 Anyways, this past week has been crazy–in a good way! The 4th of July weekend was absolutely goregous as far as weather was concerned. I got to spend my afternoons soaking up some rays around the beautiful Battle Lake while drinking fresh sweetened iced tea. Oh, I also began and finished my new favorite book, My Sister’s Keeper by Jodi Picoult. Talk about a book that can evoke emotions!

 Otherwise this past week has brought many tasks involving Residence Life Fall Training for this year. Last year I had the honor of being a Resident Assistant in Park Region. I can honestly say that it was one of the best years of my life because of all the super fantastic ladies that lived on my floor. By the end of the year we were like sisters, literally. Some of my favorite moments include Shakey Monday’s, dressing up for Halloween, decorating Valentine’s Day bags, and getting ready while listening to Michael Jackson’s greatest hits cd in the bathroom in the mornings. This past week I’ve been working with the Residence Life Training Committee to put together the most awesome 10 day training process for future RA’s and ARA’s as is possible. With all the hard work we put in, we’re making sure to include a little fun.

Besides working on next years planners, designing some name tags, and working on THEME IMPLEMENTATION (this is my favorite part!) this past week the training committee got to try out all of the team building activities the staffs will be walking through in the fall. It’s so neat to be a part of all the work that goes into training the Residence Life Staff to be as stellar as they can be! I’m so excited for this upcoming year on campus and hopefully many more Shakey Monday outings.

Baby Ducks!

May I begin this blog by celebrating the birth of eleven baby duckies in Prexy’s pond! It is quite the event to have some new life swimming around on campus! Moving on…

Club 10 “X Marks the Spot”This past weekend we moved my boyfriend into his new home just two blocks West of Concordia and what an ordeal that was! We were moving mattresses, putting together end tables, replacing lightbulbs and the list of items to clean went on and on. All of the hard work payed off though when dinner on Saturday night came straight from the grill! There’s something about the smell of a barbecue that just screams SUMMER!!! After pulling the burgers off the grill, we accompanied it with a little potato salad, chips, and some refreshing raspberry iced tea. Hehe… why are all things more memorable when they are attached to a good meal?

This week in the office began with Summer Orientation! How exciting it was to hang out with incoming freshman and their parents! It was surprising how many questions and stories everyone had to share. There were some students who would have liked to move to campus on Monday if they could have, and other students getting a first taste of adult hood and what it would be like living away from home. Either way, registration is one of the first steps towards a new academic year. The funniest thing about the day was how many questions I got about the beanie tradition here on campus. Some incomers were skeptical of just how cool they would look with a small golden hat atop their heads for a couple days. Not to worry, beanies are the coolest fashion sensation to ever sweep the midwest…and it’s always great to look back at the pictures!

The rain continues to poor, if someone were to collect donations on behalf of the sun shining I would most likely contribute. Next week I’ll be helping out with registration in the cities! I hope all goes smoothly :)

So the saying goes, “Practice makes perfect.” Well, I’m getting the impression that when it comes to golf the saying should be, “Practice, a little more practice, a lot more practice, and then a whole bunch more practice makes for not so bad.”

My New PINK Golf ClubsSummer is pracitcally here, or at least it’s trying, and at the first sign of a beautiful day this week I thought I would shake the winter dust off of my golf clubs and start warming up my swing. Now, golf seems like an easy enough concept- line up your feet, swing a large medal club at a ball that isn’t moving, and follow through. Simple right? It’s not like the ball is being thrown at you at high speeds, or that there’s another competitor trying to steal the golf ball away before you hit it, but for some reason it just isn’t as easy as it seems! I mean that golf ball is pretty small, and all the clubs have different numbers, not to mention being able to aim with that funny looking putter.

My life-long golfing adventure began about a year ago. My boyfriend is an avid golfer and he cordially introduced me to the sport. At first I just started out by driving the cart, or getting in a putt every now and then. For my birthday last summer, my parents gave me my own set of golf clubs. Keeping in mind that golf was half about the cute visors and matching gloves for me at the time, my parents got me a PINK set of golf clubs! What’s even cooler is that they have my name on them! I was in heaven, and from that moment on I was determined to take my golf game seriously.

Unfortunately, my first nine holes this summer at a course in Fargo did not show any remnants of that serious golfer I wanted to be. I was lucky if I even hit the ball at my first attempt, and then I was lucky to not hit somebody else on a completely different hole with my second. All in all the round provided some good laughs and a great memory. Not golfing all winter is like taking three steps forward and then two steps back. Oh well, the summer is young and there’s just a little rust that needs to be shaken off. Before you know it I’ll be counting all my hole-in-one’s with my fingers and toes!
